About this live event

This 60-minute session equips registered dietitians supporting patients with eating disorders in acute care—join us to gain practical confidence! We’ll review common medical and nutritional red flags, key considerations for assessing risk and level of care, and your role on the interdisciplinary team. You’ll walk away with concrete action steps for managing meal selection, structuring meal observation, responding to eating disorder behaviors, and engaging patients and families compassionately and effectively. We’ll also cover safe, evidence-informed nutrition interventions, monitoring for complications, team communication, and discharge planning. The focus is building your confidence through realistic role expectations and sharpened skills in advocacy, clinical risk recognition, and timely referrals to specialized eating disorder services.

Learning Objectives

  • Identify at least three common medical and nutritional red flags that may indicate an eating disorder in acute care and describe how these findings inform assessment of risk and level of care.
  • Describe concrete action steps for managing meal selection, structuring meal observation, and responding to eating disorder behaviors, including strategies for communicating with patients and families in a compassionate and effective manner.
  • Explain the registered dietitian’s role in managing eating disorders on the acute care team in implementing safe, evidence‑informed nutrition interventions, monitoring for complications, and advocating for timely referral and discharge planning to specialized eating disorder services.

  • Kirsten Nielsen, RDN, LD

    Kirsten Nielsen (she/her), RDN, LD, is a Registered and Licensed Dietitian in Minnesota who has worked in the eating-disorders field for more than two decades. She currently serves as the Dietetic Internship Director and Recovery Support Services Director at The Emily Program, where she develops training content and oversees educational rotations for dietetic interns. Kirsten is also part of the Clinical Expert Education Team, providing training to staff and the public. Kirsten brings extensive experience in multidisciplinary eating-disorder care and is proud to have helped expand services for individuals across Minnesota.

  • Jenn Zambo, MS RDN LDN CEDS-C

    Jenn Zambo (she/her) is the Outpatient Nutrition Manager at The Emily Program’s Triangle Outpatient (Durham, NC) and Charlotte, NC locations. Jenn attended the University of Connecticut, where she earned both her Bachelor of Science in Dietetics and Master’s degree in Health Promotion, with a focus on health education. Prior to joining The Emily Program (formerly Veritas Collaborative) in 2019, Jenn provided outpatient nutrition counseling at the University of Connecticut’s Student Health Services, where she worked with individuals with eating disorders and advised a peer education group focused on raising awareness about eating disorders. She then worked as an eating disorder dietitian at a specialty inpatient program affiliated with Walden Behavioral Care, specializing in adult and adolescent treatment. Since joining The Emily Program, Jenn has worked at all levels of care, serving both adult and adolescent clients.

All attendance will be monitored and recorded. Due to accreditation guidelines, continuing education credit will not be awarded to participants who do not attend a presentation in its entirety. Participants not meeting this time requirement will not be awarded continuing education (CE) credits. We recommend logging on to the webinar 10 minutes prior to the session start time to earn satisfactory attendance for CE credits. 


Evaluation of each session will also be required in order to obtain any continuing education (CE) certificates.
